Favorite Recipe of the Year

This makes my mouth water - like an oasis in the desert of roasted chicken. I love roasted chicken - it's so simple to prepare - a little olive oil or butter, some salt and pepper, maybe thyme or rosemary, and it's great. But it gets predictable. When I saw this recipe in a recent Martha Stewart magazine, I had to try it. It is now my Holy Grail. I wisely chose to roast 2 chickens at once so I'd have lots of leftovers! The sauce is divine - makes a great topping for a chicken sandwich later on!
